Auf einem Teller abk\u00fchlen lassen.<\/p>\n<p>Spinat und B\u00e4rlauch gr\u00fcndlich s\u00e4ubern und putzen. In einem gro\u00dfen Topf Salzwasser sprudelnd kochen und die Bl\u00e4tter hinzugeben. Sobald das Wasser wieder aufkocht, einmal wenden und wieder aufkochen lassen (dauert jeweils ca. 1-2 min). Das Wasser absch\u00fctten, Bl\u00e4tter sofort in sehr kaltes Wasser geben und abschrecken. Gut (aber vorsichtig) in den H\u00e4nden ausdr\u00fccken und mit dem Messer grob zerteilen. Mit allen weiteren Zutaten mit der Hand gut vermengen.
